Soy, Soy, and a Little More Soy by Kelly Jensen

Did you know that soybeans are the second most planted field crop in the U.S.? You do now. The only thing we grow more of in North America is corn.

There’s not a lot that will grow in the harsh environment of Alkirak. Bram has a little patch of corn on his farm, but mostly, he grows soybeans, and my ever-practical farmer processes his soy in a number of ways: milk, tempeh, miso, tofu, soy sauce, and soy nuts. He can also simply enjoy the little green beans steamed in the pod and served with salt. In the book, I have him experimenting with soy flour. I mean, who wants to live at the end of the galaxy without pancakes? He also wonders when someone is going to invent a coffee-type drink made of soy. (Hopefully never.)

I enjoyed researching what Bram and Gael might grow and might cook on the farm, because I’m interested in food, and I like to cook. I’m also a fan of soy products. I love eating the steamed fresh beans, I’ve been drinking soy milk for twenty-five years ago, and some of my favorite dishes feature tasty cubes of tofu. So I thought I’d share a couple of favorite recipes, with notes about how Gael would have adapted them to locally available produce!

Hot and Sour Soup

This is hands down my favorite soup. I love the combination of heat and spice, and the competing textures of the mushrooms, tofu, and bean shoots. At home, I’ll have bottles of soy sauce and vinegar on hand to doctor takeout versions, but it’s really easy to make yourself!

Gael would have most of these ingredients on hand, though he’d have to rehydrate mushrooms and onions. I’m not sure about the bamboo shoots, but thinly sliced celery would be an acceptable substitute! As for the sambal, let’s just assume that’s a galaxy-wide condiment, as it should be.

What you’ll need:

8 cups of stock (chicken or vegetable)
2-3 cups of sliced mushrooms (shitake or baby bellas)
¼ cup rice vinegar (more to taste)
¼ cup soy sauce
1 tsp ground ginger
1 tsp sambal oelek (chili garlic sauce)
¼ cup cornstarch
2 eggs (whisked)
8 oz firm tofu (cubed)
¼ cup green onions (sliced thin)
1 tsp sesame oil
white pepper

What to do:

Reserve ¼ of the stock for later, and add the remaining stock, mushrooms, bamboo shoots, vinegar, soy sauce, ginger, and sambal oelek to a large stock pot. Heat over medium-high heat until simmering, stirring occasionally.

Whisk the other ¼ cup of stock and cornstarch together in a small bowl until completely smooth.  Once the soup has reached a simmer, stir in the cornstarch mixture and stir for 1 minute or so until the soup has thickened.

Then keep stirring the soup in a circular motion as you drizzle in the eggs. The eggs should create slim streamers as you stir. Add the tofu, about half of the green onions, and sesame oil.  Then season the soup white pepper to taste.  This is when I might add more vinegar. If you like it hot, add more sambal! 

Garnish with extra onions. Makes about 6 servings.

Soy Peanut Noodles

This is another textural favorite—the crunch of the peanuts next to the soft noodles and small cubes of tofu. Combined with the sauce, nuts, and noodles, you can include any vegetables you want, experimenting with flavors and textures.

Gael would have most of these ingredients on hand, but could substitute soy nuts for the peanuts. I don’t think you can make a good peanut butter out of soy nuts, though, so I’m going to propose peanut butter as a galactic condiment along with the sambal.

What you’ll need:

Sauce
1 inch piece of ginger (peeled)
1/2 cup peanut butter (creamy or chunky, your choice)
2 tbsp soy sauce
1 tbsp fresh lime juice
1 tsp light brown sugar (packed)
½ tsp sambal oelek

Noodles
1 package of noodles
1 package of firm tofu
½ cup peanuts
bean sprouts, match stick carrots, finely sliced celery, green onions.

What to do:

Sauce
In a food processor, pulse the ginger until it’s mashed, then add everything else plus 1/3 cup of water and blend until smooth. If you want the sauce thinner, add more water. Sauce be kept in the fridge for a few days.

Noodles
Whatever is your favorite. You can use udon, rice stick, ramen, or even spaghetti. Just get something noodle-y. Cook according to package directions, making sure to leave them just a bit underdone. They’ll soften in the next step.

Tofu
Dry it (let it sit out on some paper towel and pat it down), dredge in flour, a little salt and pepper, and shallow fry in hot oil until very lightly golden. Set aside to drain.

Vegetables
Except for the beansprouts (if using), steam until tender crisp.

Set a large pan (or wok) over medium heat, spoon in your sauce and top with noodles and vegetables. Reduce the heat and stir until warmed through and combined. A minute or two. Serve topped with peanuts and fried tofu cubes.

I hope I’ve inspired you to try cooking with soy, tofu in particular. Both of these recipes might be a little on the spicy side, but if you are interested in cooking with tofu, the second one can definitely be made without adding the chili (sambal). Also, the above method for preparing tofu can be used for a ton of dishes. The fried cubes are even tasty on their own.

 I really loved this author’s Chaos Station series (which if you haven’t read you should) so I was excited to try this new stand alone book of hers.  The story starts off with a bit of action as Gael finds himself in a seriously bad situation and has to make a major change to gain control of his life.  He’s desperate when he answers Bram’s ad and doesn’t expect more than a bit of safety and a fresh start.  What he finds is a kind man and a chance at a life he never dreamed he could have.
One of things I enjoyed the most about this book was the pacing of the story.  There are a few dramatic events to keep the plot moving along but it’s mostly a sweet and quiet story.   Another strong point was fantastic character development.  Both of the main characters are shy and lonely and all they really want is to have a quiet, happy life.  Watching them work together to build this was so touching.  They start with a tentative friendship but as they get to know each other they start to fall in love.  It was a perfect slow burn romance with a nice bit of hurt/comfort.
Sometimes I get a bit overwhelmed with sci-fi stories because the world building is too much for my brain.  It was perfect here.  There was enough to let me imagine the unique planet of Alkirak but not so much I got overwhelmed with the details.  The author creates a unique planet and paints such detailed imagery that the reader can feel both Bram’s isolation on this remote planet and his love and pride for his home.
The ending was just perfect and made even my Grinch heart get filled with all of the feelz.  I was so happy for these two and the family they build together.
We’re about half way through the year and I’m already starting to think about which books are going to make my “Best Of” list and chances are high this book will make that list.  This is one I strongly recommend.

Bram pushed up from the table. “I’m going to make tea. Want some?”

“I can make it.”

“Sit. I didn’t ship you all the way out here to wait on me.”

“What did you ship me out here for?”

Bram didn’t answer, and the question burned the back of his neck as he performed the mundane task of making the tea. He selected an herbal blend, his favorite, and spooned desiccated leaves, fruit peel, and flower heads into the diffusing chamber at the center of a battered metal pot. He could program the beverage machine, but he preferred to make tea the old-fashioned way. Leaves and hot water. Sometimes the process of a thing was as important as the result.

He reached toward the shelf of mugs and stopped as a hand touched his shoulder. Warm breath ghosted across the cooling skin at the back of his neck, reigniting his blush. Bram let his fingers catch on the edge of the shelf and rest there, and tipped his head forward. Gael moved closer, the heat of his body evident now as he leaned in.

Lips met the back of his neck in a soft kiss. A small quake shifted the muscles beneath Bram’s skin, his body making ready to turn. He held still a moment longer before following another long-held urge, turning slowly—so slowly—until they were face to face. Well, until his mouth was level with Gael’s forehead. Bram pressed a kiss there, one as gentle as the touch of lips to the back of his neck.

“I didn’t bring you out here for this, either,” he murmured.

“Yes, you did.”

Bram took hold of Gael’s slim shoulders. “Not just this.” And not like this.

In answer, Gael lifted his face, offering up his mouth. Bram’s resolve lasted about a second longer than he thought it might before he bent to taste those lips. They’d been interrupted twice now. No longer.

Gael’s lips were so soft, melting beneath his, opening—though Bram didn’t take the invitation right away. He kissed both lips, together and separately. He tasted them, the scent of Gael mingling with the bitter tang of the outside air. Gael made a small sound: a whimper or a moan. Bram deepened the kiss, still resisting the temptation of Gael’s tongue. He didn’t want to fall all in, lose himself.

Then he was there, falling, his lips and hands operating independently of thought. He craved the warmth of Gael’s skin and wanted to compare it to the feel of his tongue. See if he moved the same way—gently, teasingly. Gael seemed as wrapped up in the kiss as Bram. He shifted, constantly, swaying into Bram, hooking his hands into the back pockets of Bram’s work pants.

Blood shot south to pulse in his cock, leaving Bram in that almost-forgotten state of arousal—somewhere between thought and thoughtlessness. He teetered there, reveling in the anticipation, and let his imagination roam. Oh, to touch Gael’s skin, to taste him. To hear the sounds he’d make when aroused, when brought to climax, when drifting in the aftermath. Would he be loud? Would he be shy and sweet?

A soft click sounded behind him. The tea. Blinking as though roused from a dream, Bram pulled back. Gael leaned in immediately, following him. He kissed Bram’s neck and ground his hips forward. Bram tugged Gael’s hands from his pockets, regret making his movements clumsy.

Gael tipped his head back. “What are you doing?”

“The tea is ready.”

One long, slow blink. “What?”

“The tea.” Bram was still holding Gael’s hands, and stupidly, he didn’t want to let go. But he did so he could turn and collect the mugs. Pick up the pot.

“Did I do something wrong?”

“No.”

“Then why did we stop?”

Bram had to consider his answer because he didn’t really know, not in a way he could express in words. It would have been so easy to keep going. To have had something fast and dirty in the kitchen, or to have picked Gael up and carried him to the bedroom.

Gael followed him into the HV room and sat beside him on the couch. Waited quietly while Bram poured the tea and handed over one of the mugs. Picking up the other mug, Bram thought a little more. Wrapped his fingers around the warm composite of ceramic and plastic and searched for just the right words.

“We’ve got time.” Bram raised the mug to his lips, but decided the tea was still too hot to take a sip. “Doesn’t all have to happen in one night.”

On Dates and Henry and Marc by Kelly Jensen

Disastrous dates have been the hallmark of Henry and Marc’s relationship up to this point. First, they got stuck on the side of the road in upstate New York during a blizzard. On Christmas Eve. Though this wasn’t a date, being trapped together in a rental car gave them the opportunity to finally put some misconceptions aside and actually get to know each other.

Their second date was set for New Year’s Eve and instead of attending the party of a co-worker, they got trapped in the basement of the building. While no one would count that as a good date, Henry and Marc actually had a pretty good time (when they weren’t crawling through duct work).

When it came to writing Counting on You, I really wanted the guys to have an actual, not get trapped anywhere, do relatively normal things and have a good time, date. And they do—or they plan to until Marc takes Henry’s surprise and turns it back around.

Counting on You

Henry and Marc can’t seem to catch a break. They’ve had two disastrous dates—the first trapped in a car during a blizzard and the second locked in a basement—followed by nearly two months apart. Even though they work for the same firm, their relationship is held together by flying visits, phone calls, and text messages. A joint assignment in Washington D.C. might be more togetherness than they can handle, however.

Henry is still battling insecurity, and this assignment is too important to his career to mess up. Marc is committed. He’s falling for Henry and looks forward to having him permanently on his team and at his side. But the real test isn’t the assignment. When Marc finally lays his heart on the line, can he count on Henry to be there for him, in every way that matters? And can he do the same for Henry when Henry needs it the most?

Excerpt

Marc moved into the crowded bar. The place smelled like wet wool and desperation. A damp coat hung over the back of every chair, and everywhere he looked, ties were loosened and buttons were undone as men and women laughed together, eager to put the workweek behind them. After finding them somewhere to lean, Henry melted into the throng. He reappeared moments later holding two tall glasses of effervescent amber liquid.

Marc nearly snatched his. “God, I have never been so happy to see a glass of beer in all my life.”

Henry grinned. “I figured.” He lifted his glass. “Cheers.”

After draining nearly half his drink in one extended swallow, Marc found a smile. “Thank you. I needed that.”

“I know.”

“Three more and I might actually start to feel human again.”

“Go ahead, you earned it.”

“We’ve got a deal to construct.”

“Marc, you did more work this afternoon than we might have done together in two days. You were a machine. We’re good. We have enough information to start structuring a new deal, meaning we can take some downtime.”

Thinking about lunch tomorrow, Marc scowled. “That isn’t exactly good news.”

“I could break your leg for you.”

“You think a broken leg would excuse me?”

“Ah….”

Marc tried to drain the rest of his glass but swallowed awkwardly, catching a large bubble in his throat. Wincing, he forced it down. The tears at the corners of his eyes felt ironic.

“You could just not go,” Henry said. The words were barely audible over the buzz of conversation around the bar, but Marc caught them.

“Not how it works. He expects me not to show up.”

“I don’t get it.”

“Never mind.” Marc tipped his head toward the bar. “Get you another?”

“Sure.”

He elbowed his way through the crowd and ordered another round, this time choosing a darker ale. Henry had emptied his first by the time Marc got back and toasted him with the fresh glass. “We’ve got this, Winnamore.”

Smiling, Marc set about killing his second drink. Somewhere around the middle of the glass, he slowed down. The beer was tasty, and his anger had faded. The bar was cozy, the atmosphere more cheery and less desperate than a beer ago… and the afternoon had been too long. Add in the fact his ire had been replaced by a practiced burn, and he really couldn’t convince himself to spend any more of his free time on it.

When the after-work crowd thinned, they found a table and ordered burgers.

Henry made a game out of sorting the sugar packets by color, volume, and ingredients. “Did you know there are about eighteen thousand grains of sugar in a single packet?” he asked.

“I do now. Please tell me you haven’t counted them.”

“No. I tried once. I crapped out at about seven hundred.”

“Seriously?”

Henry chuckled. “No. I got to thirty before my mother swept the sugar off the table and told me to stop counting things.”

Marc laughed. “I can so picture it. Did you use to get up in the night and count the silverware?”

“Of course not. I always knew how many books and comics and Legos and things I had, though.”

“You’re certifiable.”

“All the best minds are.”

Their burgers arrived and the casual conversation continued, warmed by juicy sirloin and another round of beer.

“This is exactly what I needed,” Marc said, leaning back to pat his pleasantly full belly.

“No, what you need is still to come.”

He brightened. “Sex?”

Henry tipped his head back and laughed. “Okay, yeah. Sex is good. I was talking about this, though.” He tapped the upright placard at the end of the table.

Marc leaned forward to read it. “Kara—no.”

“Aw, c’mon. You know you want to. I’ve heard stories. You rock at karaoke.”

“I really, really don’t.”

“Everyone at B and M has heard you sing but me.”

“That’s because you don’t come to Mulligan’s on Thursdays.”

“Yeah, well, I would have if either of us had been in town at the same time, on a Thursday, over the past couple months.”

“Heh.”

“So tonight’s the night. I want to hear you sing.”

Marc cocked his head with a soft “Hmm,” letting beer-and-beef-softened thoughts slip slowly across his brain. “I’ll do it if you do.”

“What? No.”

“You know you want to.”

“That was my line.”

“It’s a good one. I’m borrowing it. You should be flattered. Now….” He held up a hand to ask for a second to make his case. “I’m going to offer a one-time deal.”

“Deal?”

“If you’re too chicken to stand up there on your own, we can pick a song to sing together.”

Henry’s mouth dropped open. Sound might have escaped, but Marc heard nothing but his own laughter.

It’s been a week since a Christmas Eve blizzard changed the course of Marcus Winnamore’s life. Plan A is now Plan B, and the first item on his new agenda is taking Henry Auttenberg on a date. They’ve been invited to a New Year’s Eve party, and Marc is counting down the hours until midnight… until he can kiss Henry in front of his colleagues and friends.

Things don’t quite work out to plan. Finding the elevator out of service, Marc and Henry check the stairs, only to choose the wrong door and become locked in the basement. Close quarters once again make for close conversation, and as they explore every avenue of escape, they also explore the deepening attraction between them. For Marc, this isn’t an experiment. Will he still feel that way when he has to admit to someone other than Henry that he’s gay?

First of all, I admit I read this as a standalone, so I have no backstory on Marc and Henry’s back history here.  I’m not sure that it matters all that much.  For a short story, Jensen gives the reader a solid setup and really good characters.  We know who Marc and Henry are in their core and something about the situation of the evening as things go terribly wrong. Or right depending upon your perspective.

At first, I must have felt like them on a bad date, the rush of information, feeling a tad claustrophobic but as they talked, exploring avenues of escape and started getting to know each other better, I settled down and enjoyed their conversations and predicament.  Henry comes off as the more genial and accessible of the two men.  That he is at  ease with his sexuality and Marc isn’t helps with the connection.  Plus Marc comes off more of a bulldozer of a personality….if he runs through it or over it, it won’t be so painful… to him at any rate.  So I’m not so sure what Henry sees in him.  Maybe that’s in the other story.  At any rate.  I definitely liked this enough to go back and pickup the first story Counting Fence Posts . I’ll let you know what I find.

Max remains cautious, suspecting he is little more than a project for the handsome Jake. When he learns Jake has had boyfriends as well as girlfriends, Max has to reevaluate his priorities—and muster the courage to take a chance at love.

Just when a happy future is within their grasp, life knocks them back down. A devastating blow leaves Max lower than ever and Jake wrestling with regret. They both have to find the strength to stand on their own before they can stand together.
This was a really well done, slow burn love story.  I enjoy slow burn stories but I feel like we rarely see them. As a result I was really excited when I started reading this and realized that’s where the story was going.  These two meet under very bad circumstances and the author takes the time for them to build a believable friendship and then a believable love story.  Both of these men have some issues that they need to work through and it’s something that they do together.  I loved that there was no magic solution……no them falling in love and then all their problems are solved.
I liked Jake’s character a lot.  He was imperfect and he made some mistakes but they were realistic ones and I sympathized with him.  Max was a little harder for me to connect with but he grew on me and I enjoyed the two of them together.  There are a host of side characters and I liked most of them and thought they added to the story.  A bonus is that the ex girlfriend and mothers were not painted as horrible shrews as so often is done in this genre.
My only complaint was that some of the plot twists felt pretty unrealistic to me.  I had to do some suspending of reality in a few places.
Overall though, I really enjoyed this.  I felt it was unique and well done and is a book that I would definitely recommend.

Finally convincing him to get a companion dog, she literally drags him to Lingwood Animal Rescue where, instead of a dog, a large caramel-striped tabby cat named Marmalade gives him the eye and entices him to bring the big guy home. Little does he know, however, Marmalade is really Macavity Birch, direct descendent of the witches for whom the town is named. The current witch-in-residence, Mac’s Aunt Clare, has cast a spell on him, making the shifter unable to switch to his human form except at night.

Needless to say, human Mac is discovered, and Julian is not only shocked but also gets caught up in the family mystery when he reveals he’s recently obtained a journal written by Madeline Lingwood, who is Aunt Clare’s sister and the witch who gave this town its reputation. What will happen when Aunt Clare finds out Julian has the journal? And even more, what will it be like to spend his whole life as a cat, or worse yet, as a mouse?

This was a light-hearted sweet romance with both a geeky glasses-wearing MC and a hot redhead tabby cat shifter. Need I say more? Though short, the author did a great job building endearing characters, adding humor and wit to the story, and making this reader want a whole lot more of Julian, Mac, and the Lingwood witches.
