Soy, Soy, and a Little More Soy by Kelly Jensen

Did you know that soybeans are the second most planted field crop in the U.S.? You do now. The only thing we grow more of in North America is corn.

There’s not a lot that will grow in the harsh environment of Alkirak. Bram has a little patch of corn on his farm, but mostly, he grows soybeans, and my ever-practical farmer processes his soy in a number of ways: milk, tempeh, miso, tofu, soy sauce, and soy nuts. He can also simply enjoy the little green beans steamed in the pod and served with salt. In the book, I have him experimenting with soy flour. I mean, who wants to live at the end of the galaxy without pancakes? He also wonders when someone is going to invent a coffee-type drink made of soy. (Hopefully never.)

I enjoyed researching what Bram and Gael might grow and might cook on the farm, because I’m interested in food, and I like to cook. I’m also a fan of soy products. I love eating the steamed fresh beans, I’ve been drinking soy milk for twenty-five years ago, and some of my favorite dishes feature tasty cubes of tofu. So I thought I’d share a couple of favorite recipes, with notes about how Gael would have adapted them to locally available produce!

Hot and Sour Soup

This is hands down my favorite soup. I love the combination of heat and spice, and the competing textures of the mushrooms, tofu, and bean shoots. At home, I’ll have bottles of soy sauce and vinegar on hand to doctor takeout versions, but it’s really easy to make yourself!

Gael would have most of these ingredients on hand, though he’d have to rehydrate mushrooms and onions. I’m not sure about the bamboo shoots, but thinly sliced celery would be an acceptable substitute! As for the sambal, let’s just assume that’s a galaxy-wide condiment, as it should be.

What you’ll need:

8 cups of stock (chicken or vegetable)
2-3 cups of sliced mushrooms (shitake or baby bellas)
¼ cup rice vinegar (more to taste)
¼ cup soy sauce
1 tsp ground ginger
1 tsp sambal oelek (chili garlic sauce)
¼ cup cornstarch
2 eggs (whisked)
8 oz firm tofu (cubed)
¼ cup green onions (sliced thin)
1 tsp sesame oil
white pepper

What to do:

Reserve ¼ of the stock for later, and add the remaining stock, mushrooms, bamboo shoots, vinegar, soy sauce, ginger, and sambal oelek to a large stock pot. Heat over medium-high heat until simmering, stirring occasionally.

Whisk the other ¼ cup of stock and cornstarch together in a small bowl until completely smooth.  Once the soup has reached a simmer, stir in the cornstarch mixture and stir for 1 minute or so until the soup has thickened.

Then keep stirring the soup in a circular motion as you drizzle in the eggs. The eggs should create slim streamers as you stir. Add the tofu, about half of the green onions, and sesame oil.  Then season the soup white pepper to taste.  This is when I might add more vinegar. If you like it hot, add more sambal! 

Garnish with extra onions. Makes about 6 servings.

Soy Peanut Noodles

This is another textural favorite—the crunch of the peanuts next to the soft noodles and small cubes of tofu. Combined with the sauce, nuts, and noodles, you can include any vegetables you want, experimenting with flavors and textures.

Gael would have most of these ingredients on hand, but could substitute soy nuts for the peanuts. I don’t think you can make a good peanut butter out of soy nuts, though, so I’m going to propose peanut butter as a galactic condiment along with the sambal.

What you’ll need:

Sauce
1 inch piece of ginger (peeled)
1/2 cup peanut butter (creamy or chunky, your choice)
2 tbsp soy sauce
1 tbsp fresh lime juice
1 tsp light brown sugar (packed)
½ tsp sambal oelek

Noodles
1 package of noodles
1 package of firm tofu
½ cup peanuts
bean sprouts, match stick carrots, finely sliced celery, green onions.

What to do:

Sauce
In a food processor, pulse the ginger until it’s mashed, then add everything else plus 1/3 cup of water and blend until smooth. If you want the sauce thinner, add more water. Sauce be kept in the fridge for a few days.

Noodles
Whatever is your favorite. You can use udon, rice stick, ramen, or even spaghetti. Just get something noodle-y. Cook according to package directions, making sure to leave them just a bit underdone. They’ll soften in the next step.

Tofu
Dry it (let it sit out on some paper towel and pat it down), dredge in flour, a little salt and pepper, and shallow fry in hot oil until very lightly golden. Set aside to drain.

Vegetables
Except for the beansprouts (if using), steam until tender crisp.

Set a large pan (or wok) over medium heat, spoon in your sauce and top with noodles and vegetables. Reduce the heat and stir until warmed through and combined. A minute or two. Serve topped with peanuts and fried tofu cubes.

I hope I’ve inspired you to try cooking with soy, tofu in particular. Both of these recipes might be a little on the spicy side, but if you are interested in cooking with tofu, the second one can definitely be made without adding the chili (sambal). Also, the above method for preparing tofu can be used for a ton of dishes. The fried cubes are even tasty on their own.

“He wants to know if he freaked you out,” Delia said, looking at her phone.

The den was warm despite the air-conditioning. They languished over the huge sectional like a couple of marooned polar bears. Declan watched the blades of the ceiling fan circle, his smooth legs stretched out over her lap. She had lent him one of her tank tops and a pair of denim shorts so that he would feel comfortable during his mental breakdown.

“Gee, I don’t know. Is it customary for your first kiss to make you feel simultaneously amazing and like the shittiest person on earth?”

“So . . . I’ll tell him it’s not him, it’s you?”

Declan covered his face with a pillow. “I can’t go out with him on a date. Number one, it’s wrong. Number two, we don’t have enough prop versatility.”

Dee threw his legs off and slid over so that they were wedged side by side. She had her eBay app open and was scrolling through several listings for his benefit.

“I can have these overnighted,” she whispered in his ear.

“You’re totally instigating.” But the thought stuck, and unconsciously, he began picking through the search. “Wow, they’re really reasonably priced.”

She giggled softly. “I’m so buying them. Call them an early birthday present. It’s the perfect time, because we won’t have to worry about Mom taking the delivery.”

He managed a smile, and then her phone beeped and the message from Carter scrolled across the top of the screen.

“I’m not some horny goof-off. Please don’t Friend-zone me for a thank-you kiss.”

They shared a glance.

“He’s not, you know. He’s extremely focused. He’s in the running for valedictorian. He’s class president. He’s on the swim and track team. And, just in case you were wondering, he’s a really good—”

“No! Do not finish that sentence.”

“We didn’t have sex.”

He gasped. “You dated for two years!”

She shrugged. “Didn’t say we didn’t fool around.”

“Gaaahhh!”

Delia brought up the keyboard. She. Got. The. Message. Calm. The. Eff. Down.

Seconds later, Carter’s reply arrived, laden with exclamation marks and a squinty face. Declan read it and smothered himself with the pillow.

“I ran away because I had second thoughts about dragging him into my life.”

“He says he’s texted your phone like fifty times and he’s sorry if he’s coming off like a stalker, but he got a feeling about you. Ohhh! A feeling. Those are so complicated with him.”

“Gah!”

“There’s really only one way to solve this problem.”

Peeking out, Declan eyed her suspiciously. “What’s that?”

“Carter’s mom only lets him throw these parties because he works his ass off to keep her house in one piece.”

“Okay.”

“Usually, I go over and help. Then the maid service comes in the afternoon.”

“Uh-huh.”

She made a face. “Let me work my magic on you.” She tackled him as he pulled the pillow back over his head, and unmasked him. “Let me dress you casually. We’ll see what he thinks of you in full sunlight, and if he still shows interest, we deal with it. If he thinks better of his new obsession, then there’s no sitch.”

Declan screwed up his face in metaphysical anguish, but he knew he couldn’t say no.

Will Max Get His Happy Ever After?

I wouldn’t say I left a “loose end” in this novel, but there is something I left up to readers’ imaginations. For now, at least.

Max—the third POV character in this novel, and the one who’s not involved in the core romance—has a number of revelations during this story. He learns about boundaries, friendship, family, and respecting other people’s space. Most importantly, however, he begins to understand an aspect of his love life he’d previously ignored. I won’t say what (because spoilers), but by the end of the novel, it’s clear he has a path of self-discovery ahead of him.

Unfortunately, with only so many pages and a love story to tell, there wasn’t room to show where Max ends up when all is said and done. I’m not worried about readers finding this frustrating, because it’s set up in a way that makes it clear you can imagine for yourself what happens to Max.

However, if enough people demand it, I could be convinced to write Max’s story. We’ll see if people are curious, or if they’re happy deciding his fate for themselves!

 

 

About Fourteen Summers

 

Identical twins Aiden and Max Kingsman have been a matched set their whole lives. When they were children, Aiden was happy to follow his extroverted brother’s lead, but now that they’re in college, being “my brother, Aiden” is starting to get old. He’s itching to discover who he is outside of his “twin” identity.

 

Oliver’s goals for the summer are simple: survive his invasive family, keep his divorced parents from killing each other, and stay in shape for rowing season. Fun-loving Max takes one thing seriously: his role as “big brother.” When Aiden drifts away, Max can’t understand how his own twin could choose a boy over him. Summer won’t last forever, and with friendship, family, and happily ever after on the line, they’ll have to navigate their changing relationships before it’s too late.

JL Merrow is that rare beast, an English person who refuses to drink tea.  She read Natural Sciences at Cambridge, where she learned many things, chief amongst which was that she never wanted to see the inside of a lab ever again.

Where would Andreas want to go for the honeymoon?

So if money and time off work weren’t issues, where would Andreas want to take Darren for their honeymoon? I picked five places that I think would top his list, though you’d have to ask Cari if Darren’s list would look even remotely the same…

  1. Amsterdam. For many reasons, but mostly because even if he won’t admit it out loud, Andreas thinks it would be hilarious to watch Darren get stoned.
  2. A cabin in the woods a million miles from everything in like Canada or Alaska or something. Basically, anywhere he can escape from all of humanity except Darren, who’s one of the few people he actually likes being around for any length of time. But with a phone in case his kids need to reach him.
  3. Disneyland or Disney World. Hey, Andreas has a perpetual kid side just like everyone else, and he’s never gotten to go without his own kids in tow. He thinks it would be fun to go with Darren, and he’ll even considering putting on a pair of mouse ears if his man deploys the puppy dog eyes. Just don’t ask him to get on It’s a Small World or he might tase you.
  4. Anything that doesn’t tax his ankle. Andreas pretty much won’t say no to anything that makes Darren happy, so as long as it’s not cross country skiing, snowboarding, or like the Camino de Santiago pilgrimage or anything else that might make his ankle tender, he’s game.
  5. Tell everyone they’ve gone on a big cruise or whatever, but just stay home. At the end of the day, all Andreas really wants is to be with Darren. The less traveling they do, the less opportunity there is for disaster to strike, and besides, he’s more than happy to have a staycation. As long as he’s got Darren, he can’t ask for much more, especially if no one knows where they really are. Except the kids, of course.

It’s “hell no” at first sight for newly partnered detectives Andreas Ruffner and Darren Corliss. Darren is too chipper, Andreas is too gruff, and that whole “IA wants me to prove you’re a dirty cop” thing really doesn’t get them off on the right foot.

Cari Z was a bookworm as a child and remains one to this day. In an effort to combat her antisocial reading behavior, she did all sorts of crazy things, from competitive gymnastics to alligator wresting (who even knew that was legal!) to finally joining the Peace Corps, which promptly sent her and her husband to the wilds of West Africa, stuck them in a hut, and said, “See ya!” She also started writing, because some things she just thought she could do better.
